History for Non Reactive Pan
A “nonreactive” saucepan, pot, frying pan, or other cooking vessel does not react with the food being cooked; acidic components are common in issue foods.
Ingredients for Non Reactive Pan
- 750 ml bottle ruby port
- 1/4 cup granulated sugar
- 2 oranges
- 1/2 tsp ground allspice
- 1/2 tsp ground mace
- 1/2 tsp grated nutmeg
- 12 whole cloves
- 1 cinnamon stick
Instructions for Non Reactive Pan
- Remove the skin off the oranges and place it in a large nonreactive saucepan.
- 2 cups water, cloves, mace, nutmeg, allspice, cinnamon stick, and sugar to dissolve the sugar, place over medium-high heat, and whisk frequently.
- Allow it to come to a boil, and then reduce to medium heat. Cook for 10 minutes on low heat. Return the mixture to the pan after straining it.
- Heat the port, but don’t let it boil. Serve with a peeled orange slice in each of the Irish coffee mugs. This recipe serves 6 (6-ounce) Irish coffee glasses.
