A “nonreactive” saucepan, pot, frying pan, or other cooking vessel does not react with the food being cooked; acidic components are common in issue foods.

Ingredients for Non Reactive Pan

  • 750 ml bottle ruby port
  • 1/4 cup granulated sugar
  • 2 oranges
  • 1/2 tsp ground allspice
  • 1/2 tsp ground mace
  • 1/2 tsp grated nutmeg
  • 12 whole cloves
  • 1 cinnamon stick

Instructions for Non Reactive Pan

  1. Remove the skin off the oranges and place it in a large nonreactive saucepan. 
  2. 2 cups water, cloves, mace, nutmeg, allspice, cinnamon stick, and sugar to dissolve the sugar, place over medium-high heat, and whisk frequently. 
  3. Allow it to come to a boil, and then reduce to medium heat. Cook for 10 minutes on low heat. Return the mixture to the pan after straining it. 
  4. Heat the port, but don’t let it boil. Serve with a peeled orange slice in each of the Irish coffee mugs. This recipe serves 6 (6-ounce) Irish coffee glasses.
