Fannie May was a premium chocolate firm based in Chicago that was started in 1920.

In 2004, they filed for bankruptcy and were purchased by Alpine Confections, who also owned Harry London of Canton, OH, a comparable Midwest confectioner.

Ingredients for Fannie Mae Mint Meltaway

Cake Bottom Layer:

  • 1 stick butter, softened
  • 1 c. sugar
  • 4 eggs
  • 1 (16 oz.) can Hershey’s chocolate syrup
  • 1 c. plus 1 tbsp. flour
  • 1 tsp. vanilla

Middle Layer:

  • 1 stick butter, softened
  • 2 c. sifted powdered sugar
  • 2 tbsp. milk
  • 1 tsp. mint extract
  • 2 or 3 drops of green food coloring

Top Layer:

  • 6 tbsp. butter
  • 1 c. chocolate chips

Instructions for Fannie Mae Mint Meltaway

  1. To make the cake, mix the butter and sugar together until they are light and fluffy.
  2. One at a time, add the eggs, beating after each addition.
  3. Combine the vanilla, chocolate syrup, and all of the flour in a mixing bowl. Blend until completely smooth.
  4. Fill a greased 9 x 13 pan halfway with batter. Preheat oven to 350°F and bake for 30 minutes. Allow cooling completely. As the cake cools, it will flatten and pull away from the sides of the pan.
  5. Mix butter, powdered sugar, milk, mint extract, and food coloring together to make the middle layer. Refrigerate for at least one hour after spreading over the cooled cake.
  6. Melt butter and chocolate chips in a skillet to produce the top layer.
  7. After the mixture has a cold, pour it over the green layer and place it in the refrigerator.
